"COOKIE DECORATING" (St. Patrick's Theme)

This class is perfect for both beginners and intermediate experience. Learn how to make simple and delicious sugar cookie dough. Learn how to hold and fill and fold pastry bags, place coupler a tips, color royal icing, outline cookies and flood them. This roll-out cookie dough recipe is great for cut-out sugar cookies that can be customized for any special occasion. This is a hands- on learning environment.

"SKILLS & TECHNIQUES" 

The first step to great food is great knife skills. Learn the proper techniques that separate the professionals from the home enthusiasts. We will review meat, fish and poultry cooking, each with best methods on techniques. Proper, braising, pan-searing, sautéing, grilling secrets, poaching & roasting with be discussed and shown. Basic breading techniques will be demonstrated for various, meats, fish and poultry.

"SAUCES & ACCOMPANIMENTS" 

We will discuss the mother sauces of classic French cuisine and how to apply them. We will prepare basic pan-sauces and cold accompanying sauces. We will review and make some of the classics (Française, classic mac-n-cheese and others) We'll dine like kings on the food that we prepare.

"BREAD BASICS" 

Learn the proper bread making techniques including, proper folding and rest times, use of bigas, sours, oven temperatures and steaming benefits. This is a hands on class as you will be mixing, shaping and baking your own loaves while tasting freshly baked bread served with olive oil and Mediterranean olives.

"SOUPS & STOCKS"

Learn the professional methods on how to make stocks and the four basic soup categories (bean, chowders, bisques and broths). The class includes hands on demonstrations of all the basic soup categories and discussions and ratios of stocks. Take home the soups that we make along with some bread.

Master the most classic French pastry. Learn to make choux dough, which is the basis of the éclairs and cream puffs. Chef Rebecca with teach you the technique of piping and filling your choux with an assortment of crème patisserie, diplomat cream and fresh fruits.  Take the pastries home when finished

"PIE & TART WORKSHOP"

Easy as pie! Learn how to make a perfectly tender, flakey crust. We will make both pie and tart crusts. Chef Rebecca will teach you techniques on how to handcraft beautiful pies and tarts and how to prepare a variety of fillings. Menu: (1) Lemon Meringue (1) Fruit Tart (1) Quiche.  Take the pies home when finished.

"INTRODUCTION TO TIERED CAKES"

This class is suitable for intermediate students. Learn how to properly cut, fill, crumb coat, pipe and stack your cake. We will use an assortment of fillings and use American butter cream as icing to achieve a smooth straight edge finish. Chef Rebecca will also demonstrate different types of piping to give your cake a professional look. We will then show you how to place and decorate your cake with fresh flowers.  Bring home your masterpiece when finished.

"FOOD & WINE PAIRING"

Have you ever been in charge of bringing the wine to a dinner party? or made a great meal for that someone special and needed a wine to go with it? Certified level II wine sommelier Andy Christie, will guide you through the complexity of wines and simplify the process of selecting the proper bottles. We will do hands-on tasting and pairings with food throughout the evening. We will discuss the basic grape varieties and regions where they grow and how they affect the wines.

In this class you will bake your cake from start to finish. Class will cover, how to make the best cake batter, how to properly cut, fill, crumb coat, and pipe. CANCELLATION POLICY

a.Cancellation Policy: We accept cancellations with full refunds if made 5 days or prior to class. Cancellation requests received 4 to 2 days before class will receive store credit for the class for use on future classes or product.

b.If Cancellation requests are made within 24 hours of class start, we will have already prepared class materials for the student, therefore, no credit or refund will be given on the class. However, you CAN gift your seat to another person.

c. Notice of Class Cancellations: We reserve the right to cancel classes due to low registration, inclement weather, or for any other unforeseen reason. Students will be notified via email and text of this cancellation. Each student will be refunded his or her registration in full, no matter whether the class is canceled months in advance or 24 hours prior to class. Students will have first right of notification and registration if the class is rescheduled for a later date.
