"SOUPS & STOCKS"

Learn the professional methods on how to make stocks and the four basic soup categories (bean, chowders, bisques and broths). The class includes hands on demonstrations of all the basic soup categories and discussions and ratios of stocks. Take home the soups that we make along with some bread.

"SKILLS & TECHNIQUES" 

The first step to great food is great knife skills. Learn the proper techniques that separate the professionals from the home enthusiasts. We will review meat, fish and poultry cooking, each with best methods on techniques. Proper, braising, pan-searing, sautéing, grilling secrets, poaching & roasting with be discussed and shown. Basic breading techniques will be demonstrated for various, meats, fish and poultry.

"SAUCES & ACCOMPANIMENTS" 

We will discuss the mother sauces of classic French cuisine and how to apply them. We will prepare basic pan-sauces and cold accompanying sauces. We will review and make some of the classics (Française, classic mac-n-cheese and others) We'll dine like kings on the food that we prepare.

"BREAD BASICS" 

Learn the proper bread making techniques including, proper folding and rest times, use of bigas, sours, oven temperatures and steaming benefits. This is a hands on class as you will be mixing, shaping and baking your own loaves while tasting freshly baked bread served with olive oil and Mediterranean olives.
